Dinner List, Family Life, Sunday

Another lovely weekend is coming to an end. We’ve had a great time with friends, enjoyed family life and each others’ company.

I am still trying to resist the yule feeling for another week. I sometimes desperately want to put on christmas-jingles (can’t call it yule-jingles, that sounds too weird). In our home we try to limit the yule season to the month of December; that means no decorations, no yule related candy or food and no yule music until the first of December. I have to make some exceptions this year. In Norway we count down the four Sundays before yule, I’ll get back to that next week, as next Sunday is the first of the four. So a few decorations need to come out that day.

We spent some hours down by the beach today, feeding the swans. I took a few pictures of them, unfortunately with my mobile phone, so not the best quality. They came up and ate the food from my hand, which might not be the most clever thing to do in front of my son. He of course want to do the same… He got to share some of his lunch and was fortunately happy with that.

Anyone else still struggling with the dinner plan for this week? I thought I’d share my list. If you need recipes for anything give me a shout and I’ll have that out before dinner tomorrow.

Monday – Baked Cod with spinach salad

Tuesday – Pasta with ham and bacon

Wednesday – Trout with vegetables baked in foil

Thursday – Cauliflower soup with bacon and sausages

We have celebrated father’s day today. We started the day by letting Husband sleep in, Son and I woke him up at ten. He received his breakfast in bed. As he got up Son and I baked the best chocolate cake ever. Then we travelled across the fjord to my parents where we spent the rest of the day.

Son had a blast, playing with my brother, his girlfriend, my parents and my grandmother, my father’s mother. I think everybody’s happy about the day. But, back to the cake. I was considering keeping this one a secret, try to make it a “family secret”, but I found it online, it’s already out there. And; it’s too good not to share!

You need:

2 tablespoons coffee (cognac or rum will also do)

120 grams chocolate

100 grams butter

3 eggwhites

3 eggyolks

1 tablespoon sugar

A pinch of salt

50 grams ground almonds

50 grams flours

Icing:

100 grams chocolate

5 tablespoons of butter

2 tablespoon of coffe (or rum or cognac)

Almond flakes for decorations

Du trenger:

2 ss kaffe (rom eller konjakk)

120 g sjokolade

100 g smør

100 g sukker

3 stk eggeplomme

3 stk eggehviter

1 ss sukker

1 klype salt

50 g mel

Glasur:

100 g sjokolade

5 ss smør

2 ss kaffe (rom eller konjakk)

mandelflak (mandelskiver) til pynt

First whisk butter and sugar to a white creamy consistency, butter needs to be at room temperature. Melt the chocolate with the coffee (or alcohol if you prefer). Grind the almonds and stir the yolks. Add it all together.

Mal mandlene. Rør eggeplommene godt sammen. Bland det sammen.

Whip the egg whites, sugar and salt until it’s fluffy and white.

Cook for 22 mins at 175 degrees.

Stek på 175 grader I 22 minutt.

Simply melt the chocolate, butter and coffee, let both it and the cake cool and spread on the cake. Decorate the side of the cake with the almond flakes. Enjoy!

Nyt!

Family Life, List, Planning

For a few years now we have made a list, or I should rather say, we have a form we fill out every Sunday. We plan dinner for every day of the following week and write a list over what we need to buy. I check out the commercial leaflets from some of the larger stores in the area for inspiration, or to see what deals they have for the coming week, and often plan the meals accordingly. After using this list for a few years, I don’t think I would survive without it. I don’t understand how people can come up with what to have for dinner after coming home from a long day at work, and without having the ingredients in stock.

Filling out the list doesn’t take me more than 30 mins, I am sure we get varied meals, make sure there are two fish dinners during the week, and plan so that left overs aren’t simply tossed out, but used for a different dinner later the same week. I am also convinced that we spend less money on grocery shopping, as going to the store twice a week is usually enough. The two boxes on the bottom right we cut out and take to the store. One for early in the week, one for later (usually Thursday or Friday).

The form also have the daily chores printed on it. I like to be able to cross something of a list when I’ve done it. That’s just the way I am, and it helps me get things done around the house. At the bottom left we have a small week plan for special events and small reminders.

I’ve added the plan as a pdf. in case you feel inspired to try it. The list is already filled out for this week, but some things might seem a little cryptic to you as it is written for me to read…
